An Australian foodie with a passion for smoking meat has shared his three secrets to make the best crispy pork belly at home.

Chris revealed the cooking tips in a short TikTok video on March 6, which has since gone viral and been viewed more than 10 million times.

The three secrets for the ‘perfect crunch’ require rock salt, vinegar and an oven rather than a barbecue.

In the video, Chris begins by pricking the skin – a technique he says will cause the ‘bubble effect’ to occur.

Using a sharp blade, he then scored the skin to help the heat penetrate the fat as it bubbles through the slits, though this step is optional.

The cut of meat was then ‘boated’ in aluminium foil with a short rim extending over the top.

The second secret involves covering the entire surface of the pork belly in No.2 rock salt before placing on the middle rack in the oven at 180 degrees Celsius for one hour.

Next, Chris removed all the salt and brushed the skin with vinegar – and he said this won’t distort the taste.

The pork belly was then placed back in the oven on the bottom rack for 25 minutes at 250 degrees Celsius.

The simple steps cooked the meat to perfection and the end result had a perfect crispy outer layer that looked mouth-watering. 

Chris’ secrets to cooking the perfect pork belly: 

1. Prick and scour the skin

2. ‘Boat’ the pork belly in aluminium foil and cover the top in rock salt before cooking 

3. Remove the salt then brush the skin with vinegar and return to the oven for 25 minutes on 250C  

Thousands of TikTok users praised Chris in the comments of the TikTok video who were also surprised by the unique tips. 

‘I have been trying to perfect the crackling, so I might try this,’ one person wrote.  

‘Yum! Thank you for this. Mine never turns out right. I’ve never tried it with vinegar, only oil… that could be the problem,’ another said.
