My festive rescue: Sausages wrapped in bacon

Cocktail sausages from the supermarket rather than from the butcher tend to come in packs of 18. Double up the recipe if you want more – they’re always a hit with children! Try to buy a good-quality smoked or unsmoked streaky bacon rather than one which is thin and full of water – it makes all the difference.

SERVES 8

6 long slices dry-cured streaky bacon

18 cocktail sausages

  • Preheat the oven to 190C/ 170C fan/gas 5.
  • Stretch each bacon rasher with the back of a knife and cut each rasher into three.
  • Wrap a piece of bacon tightly around each sausage and put on to a baking tray.
  • Cook in the oven for about 45 minutes or until cooked and crisp. Serve hot with the roast turkey.

PREPARE AHEAD

Prepare up to the end of step 3. Cover and keep in the fridge. You could also freeze the wrapped sausages at the end of step 3. Thaw overnight in the fridge and cook as directed.
