Australia’s ‘best’ toastie has been discovered in a little-known cafe, which sells the $10 treat with three different types of cheese, bechamel sauce and mustard.

Cheese on Wheels is a fromagerie and BYO wine shop in Balgowlah, on Sydney’s Northern Beaches, and has been selling the ‘Cheesie’ since it opened 18 months ago.

It’s made by cutting off two slices of Brasserie Bread sourdough, slathering them in Pepe Saya butter, Dijon mustard and house-made bechamel, before grating Comte, Emmental and Swiss Gruyere on top.

The result is a decadent sandwich with ‘maximum crunch’ and powerful flavour.

Also on the menu is a truffle mushroom toastie, with taleggio cheese, bechamel sauce, truffle salsa and a side of pickles.

The shop’s owner Aurore Ghigo, who is considered to be one of the top 10 cheesemongers in the world according to Escape, wanted customers to be able to sample their cheese menu without feeling like they had to take a wheel home – and that’s where the toasties were born.

They also spent two years working on a dairy farm in Victoria learning about the creation process behind some of the cheeses they source and sell.

‘I can’t wait to go back, it has to be the cheesiest concoction I’ve ever taken a bite from,’ said another.
