Ruby Matthews mocks her Jetstar scandal as she tucks into MORE oysters with Roxy Jacenko

Ruby Tuesday Matthews is certainly making the most out of the bad press surrounding her so-called ‘oystergate’ scandal.

The Byron Bay model, 27, made headlines on Thursday for holding up a Jetstar flight by leaving the airport to eat oysters.

Rather than letting the scandal fade away, Ruby toasted to the controversy by visiting a beachside Byron Bay restaurant with her manager Roxy Jacenko, 40, to eat even more oysters on Monday.

Joined by two other publicists, the mother-of-two documented the merry outing on Instagram, posting a video of the group tucking into seafood platters while declaring ‘It’s an oystergate!’ 

At one stage, Roxy gifted Ruby with a large shopping bag from Gucci – perhaps in celebration of the model’s recent swathe of publicity. 

‘Um Christmas came early,’ Ruby wrote next to a photo of herself gleefully unwrapping her gift.

Ruby was due to fly from Byron Bay to Sydney on Thursday at 5pm but a technical issue caused the flight to be delayed.

The budget airline asked travellers to stay put while waiting for an engineer, and told passengers the new departure time would likely be about 7.30pm.

But Ruby and her travel companion left the airport to grab a bite to eat at a beachside restaurant, holding up the plane an extra 30 minutes as it waited on the tarmac for the pair to return. 

In videos exclusively taken by Daily Mail Australia on last Thursday’s flight, frustrated passengers could be heard heckling the single mother-of-two as she boarded half an hour after the plane was due to take off. 

Footage showed passengers shouting ‘how were the oysters’ and ‘what a day to be pretty’ as she entered the aircraft.

When the plane touched down in Sydney, Ruby wasted no time in calling out Jetstar on her Instagram page, slamming the airline for their handling of the incident. 

She blamed Jetstar for what had happened and told the other passengers to ‘grow up’.

‘I had a pretty traumatic flight experience, thanks Jetstar, you never cease to amaze me,’ she began.

‘I’m sorry but it really was not my fault…we were told it was going to be taking off at 7.45pm, I had not eaten since my smoothie that morning because I had been in back-to-back meetings. 

‘I was like ”f*** this, I’m going to get food out of the airport, it’s two hours until our flight takes off, I’m going to go”. 

‘I walked out, I did not hear the second announcement that apparently said ”do not leave the airport”.

‘I didn’t hear that, I swear to god, I wouldn’t have left the airport, I’m not a d***head, I do have respect for everyone else.’

She claimed she was met with ‘very personal comments’ when she got on the plane. 

‘I was basically bullied by about seven to 10 to 14 people at different times, then they made comments about my children. No Jetstar staff stopped this at any time. I copped it hard for about 15 minutes.

‘I was scared for myself because number one, I was by myself…number two, no one else who was later than me copped any abuse, it was just me alone.   

On Sunday, Ruby took to Instagram on yet again to call out the airline, claiming the staff at Sydney Airport demanded they go through her phone before boarding a flight back to Byron Bay.

‘So I just went up to the Jetstar desk to complain about what had happened [last week] and the treatment,’ she told her 210,000 followers.

‘I was just met outside by the manager and airline staff who wanted to go through my phone to make sure that I just didn’t film them inside.

‘Apparently you’re not allowed to film Jetstar staff. Which is f***king kind of crazy when everyone on that plane filmed Jetstar staff.
